Chicken, liver, cooked
Moisture, vitamins (alpha and beta carotenes and tocopherol, cryptoxanthin, pantothenate, retinol, folates) and minerals (Ca, Cu, Fe, I, K, Mg, Mn, Na, P and Zn) were analysed from 8 unbranded samples of raw chicken liver purchased from Melbourne supermarkets in 2005, fried in butter until cooked to a standard level. Fatty acid, remaining vitamins and remaining proximates were borrowed from USDA, reference 5028.
