Broccoli, fresh, microwaved

Deep green flower clusters which form the head, and pale green stems. Cooked by microwaving from raw.

Proximates and vitamins were derived from 8 individual and 4 composite samples of broccoli, purchased raw in all States and Territories in 2008 and microwaved prior to analysis. Minerals and organic acids were imputed from boiled frozen broccoli.
