Biscuit, savoury, from white flour, water cracker style

Commercially prepared round, savoury biscuits made from white wheat flour, some with added cracked pepper.

Sugars, fatty acids, minerals and vitamins were derived from a composite sample of 3 types of crackers (Nabisco Captains Table water crackers, Arnotts Thin Captain cracker biscuits and Arnotts Original Water cracker biscuit) purchased in Adelaide (1988 - AGAL - Savoury Biscuit Analysis). Fatty acids, sugar and some minerals were derived from a composite sample of 3 brands of crackers (Arnotts Thin Captain Original Water Crackers, Carrs Table Water Crackers and Nabisco Captains Table) purchased in Sydney (1989 - UNSW - Sweet and Savoury Biscuits). Cl, Se, S, F, ATOC, B6, pantothenate and biotin were derived from a composite sample of 4 types of crackers (Arnotts Thin Captain, Arnotts Original Water Crackers, Carrs Table Water Crackers, Lanes Captains Table) purchased in SA (1993 Cereal Catch Up Program). Folate was determined in a composite of 6 purchases of crackers (1x Arnotts SAO, 1x Arnotts Jatz, 1x Arnotts Water Cracker original, 1x Arnotts Salada, 1x Carrs Table Water crackers, 1x Mini Ritz) purchased in Sydney in March 2005. I, Se, Cr, Ni and Mo were determined in 6 samples of various styles of savoury biscuit purchased in Qld, SA and WA in November 2004 (22nd ATDS). Zn was borrowed from NZ Food Comp Tables 7th edition, record A140 cracker, water, Arnotts. Dietary fibre was imputed based on similar foods.
