The majority of nutrients were derived from seven samples collected in Sydney. The ratio of purchase was 2:1 butchers shop to supermarket. The samples were cooked after dressing and inedible parts removed. Sugars and fibre were imputed zero. Beta carotene was imputed from published total carotene value, assuming all carotene as beta carotene.
