Barley, pearl, boiled, no added fat or salt

Grain that has had the bran removed, then is steamed and polished. Prepared by boiling in unsalted water until tender without the addition of fat or oil.

Sugars and fatty acids were derived from a composite sample of 2 brands of pearl barley (3x Anchor and 3x No Brand) purchased in Adelaide. Cooked according to label directions (AGAL 1987 - Seafood and Products, Cereals). Na, K, Cu, Mn, P, Cl, Se, S, F, ATOC, B6, pantothenate and biotin were derived from a composite sample of five brands (3x HC McKenzies, 3x Anchor, 1x Gaganis Bros, 1x Sungrown and 1x Omega Foods) purchased from Adelaide in 1993. 200 g boiled raw for 1.5 hours in 1.5 L of unsalted water until tender and drained (1993 Cereal Catch-up Program). (1993 Cereal Catch-up Program). Vitamin C imputed based on international literature. Folate borrowed from UK 4th edition (3S), record 11-3.
